Crustless Quiche

Crustless quiche makes the perfect quick and easy meal that’s great any time of day! We get eggs from a neighboring farm and love the bright orange yolks. They make the most colorful crustless quiche. Now could you add a crust of course. I just find it’s too time consuming!

Recipe

Ingredients:

  • Butter or ghee (clarified butter) to grease your baking dish (bacon grease is also a yummy option)
  • 6-8 eggs
  • 1/2 to 3/4 cup of Half and Half, whole milk, or homemade coconut milk if doing dairy free option
  • Optional meat such as bacon or ham (I am using cubed ham this time)
  • Optional veggies such as spinach, broccoli, green onion (I used garden spinach and chard chopped finely)
  • Optional cheese of choice (I used parmesan)
  • Salt and pepper to taste
  • I add a hint of nutmeg

Recipe:

  • Crack your eggs into a bowl and discard shells into your garden or compost pile. Gardens love egg shells and boost plant health improving soil nutrients.
  • Add your milk of choice
  • Whisk until well mixed
  • Carefully lower in your cooked meats finely chopped as well as your veggies (I like to keep my veggies fresh, but you may want to lightly saute them before adding if you like softer veggies)
  • Whisk in some cheese, herbs, or seasonings
  • Pour into a greased baking dish and preheat your oven to 350*
  • Cook for about 30 minutes and check with a toothpick to ensure it is cooked through to the center. The toothpick should come out clean.
