Vegetable Soup
Vegetable soup is a yummy way to get in plenty of veggies! And this recipe is pureed, so even your picky eater won’t be able to separate the veggie they dislike the most. This recipe is super simple and can be adapted or modified with your family favorite veggies.
Recipe
Ingredients:
- 1 tbsp Ghee or Coconut oil or bacon grease
- Soup base: carrot, celery, onion, garlic
- Vegetable of choice- I used the leftover broccoli stems from a 3 heads of broccoli other options; asparagus, carrot, spinach, etc – amount varies based on serving size you are going for
- Homemade Bone Broth to cover your veggies
- Seasoning to taste; parsley, oregano, marjoram (my favorite), salt and pepper
- Optional garden greens (spinach, kale, chard)
Steps:
- Begin by warming your choice of oil in a large pot or dutch oven
- Add in chopped carrot, celery, onion, and garlic
Note: I chop mine in a Cuisinart and then keep in the freezer in baggies just for this purpose- huge time saver! If you are hand chopping the chunks can be fairly large because we are going to puree the soup later. If you are in a hurry, chop smaller chunks so it cooks faster. - Saute veggies in pot while you are chopping your main choice of vegetable- mine this time was the stem of broccoli, absolutely no waste around here!
- Add the main veggie to your pot and saute some more on medium heat for just a few minutes
- Add enough bone broth to cover your veggies and bring to a boil
- Once it has a steady boil add your seasonings of choice; herbs and salt and pepper to taste
- Stir and cover with a lid on low heat to cook
- Monitor once in awhile to see if your vegetables are cooked through. Some vegetables will take less time than others.
- Once cooked through you can add any chopped greens you would like or you can leave them out. I like to max out the vegetables. Stir into the soup and let wilt for 1-2 minutes.
- Now carefully transfer your soup into batches into a blender. I use my Vitamix and love it. Have had it forever! Blend on high for several minutes.
- Once cool, serve with a topping of parmesan, chopped nuts, or other favorite garnishes like an olive oil drizzle!
